Fortunately Feijoa trees drop their fruit when they are ready to eat. What you need to decide is if you like your Feijoas a little sweeter or if you prefer a more tangy flavour. I always suggest people think about how they like their Mangoes. If you prefer your Mangoes tangy, eat those Feijoas straight away ! If you prefer your Mangoes ripe, let the Feijoas sit on the bench for a few days to sweeten up further.
Feijoa skin is a little bitter. The best way to eat a Feijoa is to cut and scoop out the flesh. It is sweeter in the centre and it gets more tangy and sour as you get closer to the skin. Some people are happy to eat the skin. My children tend to just bite straight into them, skin and all !
If you would like your feijoas to continue to ripen, just leave them in a bowl on your kitchen bench. They will slowly ripen up over a week. If you wish to slow down the ripening, pop them in the fridge. They will last several weeks in the fridge if stored while fresh.

Feijoas come in different shapes and sizes. From thin and long, short and round, to oblong shapes. Skin colour can vary from a pale green with hints of almost yellow to a very deep green. The most important thing is that they are all tasty. We don't believe in wastage of good quality fruit just because they are different sizes.
